Arugula Salad with Balsamic Maple Vinaigrette


from our 2009 CSA Potluck Dinner

1/2 cup chopped walnuts
1/3 cup dried cranberries
1/3 cup chopped dates
1/2 cup crumbled goat cheese

1 cup extra virgin olive oil
1/2 cup balsamic vinegar
2 tbsp maple syrup
1 chopped shallot (optional)

Wash and spin dry arugula. Add other salad ingredients and toss. Mix dressing ingredients. Just before serving, pour dressing over the salad.
