Grilled Vegetables

These can be used for anything from this pasta salad to lasagna/Parmesans to grilled panini sandwiches to regular salads. Make a lot and keep leftovers on hand!

eggplant
zucchini
summer squash
onions
peppers
1/2 cup Italian salad dressing, any brand
salt and pepper to taste

Slice vegetables and put in gallon sized plastic bag, add Italian dressing, toss. meanwhile preheat grill to medium. Place vegetables on grill and season with salt and pepper on each side. Cook on grill until grill marks show and vegetables are done, turning once. Remove and let cool.
