This is a relatively fast recipe to prepare for a satisfying lunch or dinner. You can tailor it to fit your tastes and dietary preferences.
1/2 pound of your favorite pasta shapes
1 large bunch of broccoli, cut into florets
1-4 tbsp olive oil
2-4 cloves garlic, pressed or minced
chopped fresh herbs to taste, such as basil, rosemary, or oregano (you can use dried herbs in the winter)
zest of 1 lemon
crushed red pepper flakes, to taste
sea salt, to taste
parmesan or vegan parmesan to taste, optional
Cook pasta according to package directions. During the last couple minutes of cooking time, add the broccoli to the pasta pot. When the pasta is ready, drain pasta and broccoli and transfer to a large mixing bowl. Add all other ingredients, toss and taste. Adjust seasonings as necessary. Serve.
You can add cooked chickpeas, baked tofu, or grilled chicken to the mix to make a filling one-pot meal.
