Pickled Zucchini

Yield: 1/2 gallon

Zucchini (also works with eggplant, yellow summer squash)
1 1/2 c water
garlic
2 tsp. salt
2 tbsp. honey
fresh oregano
fresh thyme
1/2 c apple cider vinegar

Cut veggies into thin slices and place in a jar. Blend the rest of the ingredients and pour over the veggies. Cover & shake, then let sit for three days.
