Roasted Vegetable Pizza

Ingredients
The following ingredients are suggestions only.
Please be creative and use a unique combination of
vegetables of your own!

Beets
Turnips
Broccoli
Winter squash
Peppers
Potatoes
Swiss Chard
Goat Cheese
Tomato Sauce
Pizza Dough
Olive oil
Thyme
Oregano
Rosemary
Salt and pepper

Preparation:
This is a pretty flexible recipe. Preheat oven to 475. Cut up all of your vegetables (not the chard) into large 1 inch chunks. Mix in a bowl with olive oil and seasonings. Put the vegetable mixture into a casserole dish or baking sheet and cover with foil. Bake 30-40 minutes.

In the meantime prepare your pizza dough(s). Spread tomato sauce on the dough. Take your veggies out, mix some roughly cut chard in to the vegetables. Spread vegetables on pizza. Place a few spoonfuls of goat cheese around the pizza, season with some salt and pepper. Reduce oven temperature to 425. Bake uncovered in the oven for 15-20 minutes, or until crust is golden.
