Summer Squash Supreme

Serves 4 – from Rawsome! by Brigitte Mars

Ingredients:
2 cups macadamia nuts, soaked overnight then rinsed and drained
4 yellow summer squash, sliced
1/2 cup light miso
1 teaspoon tumeric
1 cup water
2 tablespoons lemon juice
1 teaspoon sea salt
1 onion, finely chopped
1 teaspoon paprika

1. Place summer squash in food processor.
2. Process till well chopped
3. Transfer to serving dish
4. Combine remaining ingredients in food processor
5. Process till pureed
6. Pour puree over squash
