Vegetable Loaf

1 lb fresh spinach or swiss chard
3 TBSP oil
2 cups diced zucchini
1 cup chopped onions
1/2 cup chopped celery
1 clove minced garlic
3 eggs, beaten
3/4 cups ricotta cheese
1/2 cup mozzarella
3/4 cup italian style bread crumbs

Cook spinach (or chard) till wilted. Press out as much liquid as possible. In pan, heat oil. Saute zucchini, oinions, celery, and garlic till tender. IN a bowl mix eggs, cheese, spinach, and crumbs. Stir in sauteed vegetables.

Place into a greased loaf pan.

Bake at 350 for 1 hour.
