1 head endive or escarole
1 can white kidney beans
1 can chicken broth
2 cloves garlic (we love garlic-you can use less)
(few basil leaves, and/or tomatoes are good)
Clean, chop lettuce. Put in pot with beans, chicken broth, garlic, other ingredients if using (not part of classic soup). Bring to boil and cook until greens are wilted, and cook at simmer 10 more mnutes.
