- 3 cups diced watermelon, seeds and rind removed
- 2 finely diced jalapeno peppers, seeds and ribs removed
- 1/2 bunch cilantro
- juice of 1 large lime
- 1/4 large red onion, diced
- 2 pinches of salt
- Combine all ingredients and refrigerate before serving. May be made up to 1 day ahead.
