Black Bean and Corn Salad with Citrus Vinaigrette

Serves 8
Ingredients:
- 2 cans of black beans
- 1 small red onion or green onion, peeled and minced
- 1 ear fresh corn, kernels removed from cob
- 1 red pepper, de-seeded and diced small
- 1/4 cup cilantro or parsley, minced
- juice of 1 lime
- 2 Tablespoons red wine vinegar
- 1 Tablespoon sugar or agave nectar (optional)
- 1/3 cup olive oil
- 1 teaspoon cumin
- 1/4 teaspoon black pepper
- sea salt
Directions:
- Rinse canned beans with cold water and drain.
- Mix corn, red onion, red pepper, cilantro and beans in a bowl. Whisk lime juice, red wine vinegar, sweetener, olive oil, cumin, black pepper and sea salt. Pour dressing on top of beans and veggies and marinate for 35-40 minutes (or longer).
