Apple, Radish & Carrot Salad

For the Dressing:

  • 1 small garlic clove
  • 1 1/2 tsp grated fresh ginger
  • 2 tbsp olive oil
  • 1 1/2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • 1 tbsp water
For the Salad:
  • 1 large carrot, peeled and cut into matchsticks
  • 2 apples, thinly sliced
  • 1 bunch radishes, thinly sliced
  • big handful greens (Spinach, arugula, spicy mix all hold up well to this nice asian dressing)
  • small handful raisins
  • 1 tbsp toasted sesame seeds


  1. Combine the grated ginger and garlic with the rice vinegar, oil, soy sauce, water and sesame oil. Stir in the honey and whisk until it has dissolved.
  2. Combine carrots, radishes, apples, greens and raisins in a large bowl. Drizzle with dressing and top with sesame seeds before serving.
