Aji Dulce Peppers – a small, prized, very flavorful, sweet pepper found in Latin American and Caribbean cooking

Use the aji dulce pepper as you would any sweet pepper in recipes.
Make a sofrito – in a food processor combine onion, garlic, aji dulce and other peppers, cilantro, tomatoes, salt and pepper and chop finely.
Cook this mixture in a small amount of oil before adding to chili, soups, stews and roasts.
Sofrito freezes well in ice cube trays or zip top bags.
