Fresh Peach Salsa

Ingredients

2 large tomatoes
2 medium ripe peaches; peeled, halved, and pitted
1/2 C finely chopped red onion
1/2 C finely chopped red or green bell pepper
2-3 tbsp fresh lime juice
2-3 tsp sugar
1/4 tsp salt
1/4 C cilantro; chopped

Directions

Core, seed, and finely diced tomatoes. Place them in a medium mixing bowl. Finely chop the peaches and add them to the tomatoes.

Stir the remaining ingredients into the salsa, adding the lesser amounts of lime juice and sugar at first. Wait a few minutes, then taste the salsa and add more if needed. Cover and refrigerate the salsa until serving time.

Makes about 3 cups.

Peach Kale Smoothie

Ingredients:

  • 2 stalks of kale, stems removed
  • 2 peaches or nectarines, diced
  • 1 banana
  • 1 cup(ish) milk, almond milk, or orange juice
  • 1/2 cup ice cubes
  • optional 1/2 cup frozen pineapple or mango

Directions:

Blend all ingredients well.  Add more liquid if desired.

Summer Colors Salsa

Ingredients:

  • 2 tomatoes, chopped
  • 1/2 cucumber, diced
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 1/2 peach, diced
  • Cilantro to taste
  • 2 Tablespoons apple cider vinegar
  • juice from 1 lime

Directions:

Combine ingredients.  Stir for equal coating.

Tomato Peach Salad

Tomato Peach Salad

Directions:

Toss tomato and peach wedges with red onion slices. Drizzle with cider vinegar and olive oil; season with sugar, salt and pepper.

Jacqueline says, “That’s it -and boy is it a tasty, refreshing salad.  I made it without the slightest alteration -and it needed none.  This ended up being such a hit that I’ll be taking a bigger batch to our Labor Day Weekend Cookout. “

Peach Salsa

3 cups pureed tomatoes
3 cups chopped tomatoes
5 large peaches (peeled and chopped)
2 green bell peppers(chopped)
2 onions (chopped)
3 (or more) finely chopped jalapenos (keep seeds in if you like it spicy)
1/4 cup sugar
1/2 tsp cumin
1 tsp garlic pepper (or a clove or two of fresh garlic-minced)
1-2 tbsp lime juice
splash of apple cider vinegar

Combine all ingredients in a bowl. Let the mixture sit in fridge for about an hour prior to eating to allow the flavors to mingle.

Dessert Pizza

Ingredients
1 Pre-baked pizza crust (Boboli brand is good)
3-4 fresh peaches or nectarines
Spice mixture (cinnamon, nutmeg, allspice, ginger and cloves) dried and ground
3-4 Tbsp granulated white sugar

Preparation
Preheat oven to 450 degrees. Sprinkle crust with 1-2 Tbsp sugar and ½ – 1 Tbsp spice mix (to taste). Slice fruit and arrange in a pretty pattern over the crust. Sprinkle fruit with additional sugar and spice mix (same measurements or to taste). Bake pizza for 10-15 minutes. Enjoy warm or cool.
