Watermelon, Cucumber & Feta Salad

Yellow watermelon

It’s the peak of summer so cool off with this refreshing, easy to assemble salad.

Ingredients
  • 4 cups cubed watermelon
  • 1 cucumber, seeded and diced
  • 4 oz feta cheese
  • 2 limes, juiced
  • 2 Tablespoons olive oil
  • 1/2 cup mint or basil, sliced thinly
  • freshly ground black pepper
Directions
  1. Toss the watermelon and cucumber together in a large bowl. Sprinkle the cheese on top and season with olive oil, lime juice and black pepper. Sprinkle the chiffonnade of mint leaves over the top of the salad as a garnish.

Watermelon Agua Fresca

Ingredients:

  • 8 cups, seedless watermelon cubes
  • 6 Tablespoons honey
  • 1/3 cup fresh lime juice
  • A few springs mint or rosemary
  • Ice

Directions:

  1. Puree watermelon in blender.  Strain into bowl with fine meshed sieve.  Stir in honey and lime juice.  Transfer to a pitcher; stir in 1 1/2 cups water, ice, mint and lime slices.  Chill, serve over ice.

East Street Watermelon Salsa

Ingredients:

  • 3 cups diced watermelon, seeds and rind removed
  • 2 finely diced jalapeno peppers, seeds and ribs removed
  • 1/2 bunch cilantro
  • juice of 1 large lime
  • 1/4 large red onion, diced
  • 2 pinches of salt

Directions:

  1. Combine all ingredients and refrigerate before serving.  May be made up to 1 day ahead.

Tomato-Watermelon Gazpacho

Ingredients:

  • 2 cups seedless watermelon pureed in a blender
  • 1 cup seedless watermelon coarsely chopped
  • 3-4 medium tomatoes, peeled, seeded and coarsely chopped (heirloom are especially beautiful in this recipe)
  • 1 cucumber, peeled, seeded and chopped
  • 1/2 cup bell pepper (any color) seeded and chopped
  • Juice from 1 lime
  • 1/2 cup cilantro or to taste
  • 1 teaspoon chopped fresh ginger
  • 1/2 jalapeno seeded and chopped
  • 1 scallion finely chopped
  • Salt and pepper to taste
  • Avocado, peeled and sliced (optional)

 

Combine all ingredients in a large bowl, stir well and chill before serving.  Ladle into chilled bowls and top with avocado slices if desired.
